Grilled Chicken Apple Cranberry Walnut Salad

At 397 calories for the salad, the chicken and the dressing, this light salad is a great, fiber-filled option, that’s perfect for fall apple season! Optionally, you could pair this with “Simple Girl Organic Sweet Vinaigrette” for a slightly healthier zero sugar, 3 calorie option and only 70 grams of sodium, dropping the calories down to only 347 calories!

Optionally, you could replace the chicken breasts with 4 ounces of grilled salmon (185 cal / 32g protein / 5.5g fat / 0g carbs) for some omega 3 and omega 6 fatty acids.

Apple Cranberry Walnut Salad
Serving Size: 1/6th of Salad
6 c. salad (I used a combination of arugula and baby spinach, any spring green mix will do)
1 red apple
1 green apple
1 c. walnuts, roughly chopped (such as Diamond of California)
⅓ c. crumbled feta cheese
⅓ c. dried cranberries

Dressing
1 c. apple juice
4 T. apple cider vinegar
2 T. honey
½ t. salt
¼ t. black pepper
¼ c. oil

Grill the chicken breasts until cooked, season with salt & pepper to taste. Core and chop the apples (thin slices or 1-inch chunks). Toss lettuce, apples, walnuts, feta, and cranberries together in a large bowl.

Whisk together all dressing ingredients. Toss with salad immediately before serving and slice chicken breasts into strips and top with 1 chicken breast per salad. Enjoy!
